Starting from Leiria I plan to have the 16 August in Castelo Branco for a private car event full of good feelings and driving, so if you have a weak stomach, this ain't for you.
Then back to Leiria or drive up to Coimbra thro middle of Portugal until we reach the Guarda and Serra da Estrela high point for an amazing view. No snow now but gorgeous areas. 
Then we drive down the mountain but always going up north till we start catching the river Douro and start following it till Porto. Be ready for some sportive style driving. Many hotels on the way but you free to choose what you want to do.
